Kiki Aranita and Chris Vacca own and operate Poi Dog, a food truck and restaurant in Philadelphia. Their food draws heavily from Filipino, Japanese, Okinawan, Chinese and Portuguese cuisines as they reinterpret what is called the "local food" of Hawaii, a product of the laborers who migrated to the islands to work on sugar plantations. Kiki and Chris often travel in the food truck off-season to the source cultures of "local food," cooking with and learning from street vendors. They frequently teach cooking classes and have run a month-long pop-up restaurant in Honolulu, where Kiki was partly raised.
